Ingredients

  • 2 oz Dark Rum - I used The Kraken dark rum, if not available, light rum works too
  • 8 to 10 leaves Fresh Mint
  • 1 whole Strawberry - fresh, ripe, quartered, top removed
  • ¾ oz Fresh Lime Juice - fresh squeezed
  • 1 oz Simple Syrup
  • 1 oz Cranberry Juice - I used Langer's cranberry juice
  • Sparkling Water or Club Soda - plain, for topping off the cocktail at the end

Instructions

  • Cut the top off of a large ripe strawberry and cut it into quarters. In a cocktail shaker, muddle the strawberry chunks and 8 to 10 fresh mint leaves that have been freshly pulled from their stem. Muddle everything with a muddler until crushed and fragrant.
  • Set the muddler aside and splash in the rum, lime juice, simple syrup, and cranberry juice.
  • Fill the shaker about three-quarters of the way with ice and cover. Shake everything together until completely chilled through.
  • Using a cocktail strainer, strain the rum mixture into a tall glass over fresh ice.
  • Top off your 4th of July strawberry rum drink with plain sparkling water or club soda.
  • Garnish with a fresh red strawberry, thin lime slices, and a sprig of fresh mint. Serve very cold.
