1packBoneless Skinless Chicken Breasts - cut into 1 inch cubes
2cupsFresh Basil Leaves - packed
1 or 2clovesGarlic
1tspCoarse Salt - for seasoning chicken
1/2tspCracked Pepper - for seasoning chicken
1/3cupGood Fruit Olive Oil - plus 1 tbsp for cooking
1tspYellow Curry Powder
1/2tspCumin

In a bowl, toss chicken breast cubes with salt, pepper, yellow curry powder, and cumin.
Drizzle a little olive oil in a hot skillet over medium heat and drop in seasoned chicken. Toss the chicken turning and stirring it to brown on all sides. Cook for about 15 to 20 minutes or until cooked through.
In a food processor, puree fresh basil leaves with olive oil, fresh garlic, and a pinch of salt + pepper. Drizzle olive oil in little by little as you puree the ingredients together.
When chicken is finished cooking through, remove and transfer to a serving plate. Top with fresh tomatoes, and drizzle with fresh basil puree. Top with an extra squeeze of lemon or lime if desired. Serve with your favorite short pasta, orzo, or steamed rice, if desired.
