2ozChampagne - chilled champagne or sparkling prosecco wine - dry
2tbspWhite Sugar - for cocktail rim

Make cinnamon sugar for the cocktail rim: in a small bowl combine 2 tablespoons of sugar with a 1/2 teaspoon or so of ground cinnamon and stir together. Sprinkle on a flat plate. Swipe champagne flutes with a wedge of fresh lemon and dip into the cinnamon sugar mixture. Set aside.
Fill a cocktail shaker three-quarters of the way with fresh ice. Combine crown apple whiskey, maple syrup, fresh lemon juice, and honeycrisp apple juice or apple cider in the cocktail shaker. Shake vigorously to combine ingredients together until chilled through.
Strain the apple cider cocktail mix into your prepared champagne flutes taking care to divide the liquid evenly between 2 glasses.
Top the maple apple cider mimosa cocktail mix with chilled crisp champagne as desired to fill the glass the rest of the way. Garnish with thinly sliced red apple. Serve immediately. Serve very cold.
