Holiday Thanksgiving Salad Recipe with Cranberries and Apples
This simple and most festive holiday Thanksgiving salad recipe with cranberries comes layered with lots of special goodies to make it fit for a holiday meal!
1Red Apple - thinly sliced - such as gala, fuji, or honeycrisp
½cupDried Cranberries
¼cupSalted Roasted Pumpkin Seeds - or pepitas
¼cupGoat Cheese Crumbles
¼cupPomegranate Seeds
¼cupCaramelized Pecans
For The Apple Cider Vinaigrette/Drizzle:
¼cupApple Cider Juice
1tbspOrange Juice - fresh squeezed
1tbspPure Maple Syrup
½tspApple Cider Vinegar
1tbspOlive Oil
1tspLemon Juice - fresh squeezed
1tspCoarse Salt
½tspCracked Pepper

Assemble The Salad:
Start by layering the spring mix greens onto your salad serving platter first. Next take 2 cups of loosely packed fresh spinach leaves and sprinkle them down over the spring mix in the center of platter.
Core your red apple and then cut it in half. Make thin slices from the halves and arrange the apples in groups of 4 or 5 slices all around the top of the salad. Or layer evenly all over the top of the salad, as desired.
Now you can evenly sprinkle on dried cranberries and roasted salted pumpkin seeds over the apples and greens.
Lastly, finish this festive apple, cranberry, and spinach salad by sprinkling on caramelized pecans, pomegranate seeds (or pomegranate arils), and last but not least, the goat cheese crumbles.
Make The Apple Cider Vinaigrette:
To make the dressing for the salad, grab a small bowl and a whisk. Combine apple cider juice, fresh-squeezed orange juice, a hint of fresh-squeezed lemon juice, apple cider vinegar, maple syrup, and olive oil in a small bowl.
Season with about 1 teaspoon of coarse salt and a 1/2 teaspoon of cracked pepper. Whisk together well until fully combined. Alternatively, you can pour the ingredients in a mason jar with a lid and shake together to combine.
