Equipment

Ingredients

  • 2 lb Salmon Fillet - boneless w/ skin on or off
  • 7 or 8 sprigs Fresh Dill
  • 1 large Fresh Lemon - sliced
  • 2 tbsp Olive Oil
  • 1 tbsp Unsalted Butter - Sliced into squares
  • 1 tsp Coarse Salt
  • 1 tsp Cracked Pepper

Instructions

  • Pre heat oven to 375 degrees. Line a baking sheet with a sheet of foil. Season the salmon fillet all over on both sides with salt and pepper. Place half of the lemon slices down on the foil. Place some dill stems/sprigs over the lemon slices. Now place the salmon fillet on top.
  • Dot the salmon fillet with squares of butter. Pull apart the dill into smaller pieces and sprinkle the top of the fillet all over with fresh dill. Place lemon slices on the salmon over the butter and dill. Tuck more dill in between the lemon slices, if desired.
  • Give everything a drizzle of olive oil. Seal the entire fillet of salmon with foil by covering the top of the fillet with a second sheet of foil. Cinch the edges of the foil together and seal the salmon in all the way around. Leave some space over the salmon creating a foil pouch or pillow.
  • Bake in a 375 degree oven for 15 to 20 minutes. Remove and serve immediately.
