Easy Orzo Pasta Salad Recipe with Feta & Kalamata Olives
A simple orzo pasta salad tossed with cherry tomates, greek olives, and feta is flavored up with hints of fresh basil, olive oil, and a hint of vinegar.
2cupsOrzo pasta - cooked, strained, and slightly cooled
2tbspFruity Olive Oil
3/4cupKalamata Olives - Sliced or or rough chopped
4 or 5sprigsFresh Basil - leaves rough chopped
1cupCherry tomatoes - sliced in half
4ozFeta cheese - cut into cubes
2tspBalsamic or Apple Cider vinegar
1tspCoarse Salt + Ground Pepper

Instructions
Prepare orzo pasta according to package directions or by simple dropping into a sauce pan of boiling water with some olive oil added. Cook pasta until soft and chewy on the outside but still slightly firm in the center. About 7 to 10 minutes. Remove, strain, and transfer to a large mixing bowl.
Let the pasta cool slightly and then add in cherry tomatoes, kalamata olives, feta cheese, and chopped basil.
Drizzle in olive oil and balsamic vinegar or apple cider vinegar. Season everything to taste with salt and pepper. Toss everything together until combined. Garnish with fresh basil and serve.
