Instructions
Begin by removing the lid from the instant pot and pushing the sauté button. Once the pot is hot and ready, melt in the butter and toss in diced onion, diced celery, diced carrots, and diced bacon.
Stir the vegetables and bacon mixture in sauté mode until bacon has rendered and diced vegetables are tender, about 8 to 10 minutes. When finished, hit cancel to stop sauté mode on the instant pot.
Now you can toss in the diced leftover ham and pour in clean, rinsed split green peas. Once you toss in the diced ham and peas, stir to combine with the rest of the ingredients in the pot.
Splash in the chicken stock and season to desired taste with coarse salt and cracked pepper. Sprinkle in the onion powder and garlic powder and give one more gentle stir.
Cover your instant pot securely with the lid and hit the pressure cook button. Cook this easy hearty soup on high pressure for 17 minutes.
When cook time is up, allow soup to release steam on its own, naturally for 15 minutes. Next, push the steam release button to release remaining steam. Uncover and stir.
Serve hot and garnish with a sprinkle of freshly minced parsley, if desired.
