This easy cajun recipe with ground beef can be spooned over fresh cooked rice and enjoyed as an easy meal any night of the week. Simple ground beef is browned and lightly simmered with colorful bell peppers, cajun spices, and splashes of beef stock.

1lbGround Beef - I used ground beef with 20% fat and drained a few spoonfuls out to make it leaner.

2tbspTomato Paste
3tspCajun Seasoning
2 to 3dashesWorcestershire sauce
3 to 4dashesTabasco - I used Chipotle Tabasco for a smoky finish, optional - classic Tabasco works too
pinchesCoarse Sea Salt - added to taste

Instructions
In a wide large skillet over medium heat, drizzle in the olive oil. When hot, toss in diced red peppers, diced green pepper, diced onion, and diced celery.
Stir to combine and cook 3 to 5 minutes then add in the fresh minced garlic. Next add in one teaspoon of the cajun seasoning, reserving the rest.c
Stir the diced vegetables and garlic to combine once more and continue cooking until garlic is fragrant and vegetables begin to soften becoming tender, about 8 to 10 minutes.
Add in the ground beef and brown it. Break up the ground meat with a flat wooden spatula until evenly browned and broken up. Add in the last two teaspoons of the reserved cajun seasoning plus the 2 tablespoons of tomato paste.
Stir the mixture until the tomato paste begins to melt into the meat with the heat from the pan. Now season sprinkling in pinches of coarse sea salt and cracked black pepper to taste.
Lastly, splash in the beef stock and shake in a few dashes of Worcestershire sauce plus (optional) a few dashes of Tabasco sauce. I used the chipotle Tabasco sauce for a nice hint of smoky spicy finish. Regular classic Tabasco works too.
Bring everything to a light simmer and then cover. Reduce the heat to low and simmer for 30 to 40 minutes or until diced vegetables are tender and cooked through and the flavors in the beef are nicely developed.
Uncover and sprinkle with fresh minced green parsley or minced cilantro to garnish. Serve over the fresh cooked rice and enjoy hot.
