Using a paring knife, gently cut the vanilla bean down the center to revealing the seeds inside. Gently press the vanilla pod open with the top of the knife and drop into a sauce pan.
Pour water and sugar into the sauce pan with the vanilla bean over medium heat. Stir ingredients together as the sugar melts into the water. Bring to a boil.
Once mixture comes to a boil, reduce heat to low. Simmer on low an additional 8 minutes allowing the flavor of the vanilla bean to deepen and concentrate the flavor of the syrup.
Strain and let cool. Once cooled, pour into an airtight container. Consume within 7 to 10 days.
