Pre-heat the oven to 350 degrees F and grease a 9x5 inch loaf pan with baking spray or grease it with a little butter. Combine dry ingredients. In a separate medium bowl start by combining flour, baking soda, salt, and cinnamon by whisking together gently until combined. Set aside.

In the electric mixer or stand mixer, combine butter and sugar together by beating on medium speed for 3 or 4 minutes or until light and fluffy. Next, crack your eggs open into a separate little bowl and add them in one at a time along with the vanilla.
3/4 cup Firmly Packed Brown Sugar, 1 stick 8 tbsp Unsalted Softened Butter, 2 Eggs, 1 tsp Vanilla Extract
Finish beating the eggs into the batter and then reduce the speed to low. Now grab the bowl with your combined dry ingredients (flour/baking soda/salt/cinnamon) and with the speed still on low, add it in a little at a time until combined.
Remove the bowl from the mixer and scoop in your sour cream, and pour in the cup of small diced fresh red apple. Finishing up by stirring these in with a spatula by hand until just combined.

Transfer the batter to your greased 9x5 inch loaf pan and bake in a 350F degree oven for 50 minutes to 1 hour or until toothpick inserted comes out clean.
When bake time is up, remove from the oven and set on a rack to cool for 20 to 30 minutes before serving. When bread is completely cooled, wrap remaining bread firmly with plastic wrap and finish within a week.
