Splash in the plain vodka plus a bottle of pre-chilled dry Pinot Grigio white wine and gently stir with a bar spoon.
Top off with a heaping cup (or more as desired) of already chilled sparkling champagne and give one more gentle stir. Set the rest aside on ice for guests to top off their drinks at their leisure.
Keep a long bar spoon in the pitcher and stir occasionally as you serve to keep contents evenly combined.
To serve, fill two stemless wine glasses with ice and top the ice with thinly sliced strawberries, lime slices, and fresh mint (if using).
