This easy Valentine’s Day cocktail for two is loaded with juicy red strawberry flavor and cherry syrup then balanced out with fresh lemon juice. Its festive and bold red color makes it the perfect sparkling cocktail to celebrate Valentine’s Day!

If you’re looking for easy and delicious strawberry rum drinks, then this simple muddled strawberry cocktail won’t disappoint! Hints of cherry syrup from a jar of Maraschino Cherries add to the ruby red color with hints of fruity flavor. It has become one of my favorite easy mixed drinks with rum to enjoy for festive holidays just like this one!

You’ll be surprised to see that even with the fruit and cherry syrup, this cocktail is not overly sweet. It holds it own remaining crisp, colorful, and refreshing.

Pick Your Favorite Rum For This Festive Valentine’s Rum Cocktail

Pick your favorite rum for mixing in cocktails. I personally used Captain Morgan spiced rum in mine, but I think that Bacardi white rum would work nicely as well. You can’t go wrong either way. Rum just naturally boasts notes of sugary vanilla and caramel-like sweetness that can’t be beat (especially when mixed with fresh fruit).

To make this fun and festive Valentine’s rum cocktail, you can dip your cocktail glasses in a mixture of red and pink sanding sugars, if desired. It adds another festive pop of color and makes these so much fun to drink. If it’s a little hint of pink you prefer, give this Antique Rose Valentine’s Day cocktail a try!

Make a Valentines Day Cocktail Rim For your Glasses

To do this, you can either: 1) rub the rims of your glasses with a lemon wedge and dip into the sanding sugars or 2) lightly dip the rims of the gasses in a little corn syrup and then dip into the sanding sugars. The latter option will give you a more saturated coating of the sugars whilst the lemon rub will give you a lighter coating. Place glasses in the freezer to set while you prepare the cocktail.

Muddle Fresh Strawberries For your Valentine’s Day Rum Cocktail

Start by quartering 2 large red and ripe strawberries. Toss the fresh cut strawberry pieces into the mixing glass of a cocktail shaker.

Muddle the strawberry pieces until they are completely crushed and all the juices have been extracted.

Splash In Lemon Juice, Cherry Syrup, and Rum

Next, splash in the fresh squeezed lemon juice and splash in a bright red syrup from your bottle of Maraschino Cherries. Now add the rum to the mixing glass. Fill your mixing glass about 3/4 of the way with fresh ice and cover.

Shake these ingredients together well until thoroughly mixed and totally chilled through. Now, using a cocktail strainer, strain this mixture into your chilled coupe glasses.

Lastly, Top off your cocktail with a splash of pomegranate juice. Finish the Valentine’s rum cocktail by floating a little Rosé Champagne or (sparkling wine) right over the top.

For my cocktails, I used Izze Sparkling Pomegranate juice and then floated a little bit of Rosé sparkling wine right over the top. Anything from Mionetto Rosé to Domaine Ste. Michelle Rosé will work nicely in this festive strawberry rum drink.

2 Coupe Cocktail glasses or Martini Glasses
1 Cocktail Shaker with Lid
Jigger for measuring spirits
Cutting board and knife for cutting fruit

Ingredients
  

  • 2 large Fresh Strawberries - cut into quarters
  • 2 tbsp  Maraschino Cherry Syrup
  • 2 oz Spiced Rum or White Rum - Such as Captain Morgan or Bacardi White Rum
  • 1½ oz Blood Orange Juice - fresh-squeezed
  • 1 oz Izze Sparkling Pomegranate Juice - for topping off
  • 1 oz Rosé Champagne or Sparkling Rosé Wine - for topping off

Instructions
 

  • Make a cocktail rim by rubbing your glasses with a lemon wedge or dipping in light corn syrup and dipping into red and pink sanding sugars. Set your glasses in the freezer.
  • In a mixing glass, muddle the fresh strawberry chunks until crushed and juicy. Next, splash in the fresh squeezed lemon juice and splash in a bright red syrup from your bottle of Maraschino Cherries.
  • Now add the rum to the mixing glass. Fill your mixing glass about 3/4 of the way with fresh ice and cover.
  • Shake these ingredients together well until thoroughly mixed and totally chilled through. Now, using a cocktail strainer, strain this mixture into your chilled coupe glasses.
  • Lastly, top off each cocktail with a splash of Izze sparkling pomegranate juice. Finish the Valentine’s rum cocktail by floating a little Rosé Champagne or (rosé sparkling wine) right over the top of each cocktail. Serve nice and chilled.
