For this easy recipe, I used a smoky mushroom and swiss chicken sausage by Amylu that I picked up at my local Costco grocery store. This same brand also makes a tasty apple gouda chicken sausage that would pair nicely here as well.
If you can’t find this brand, look for Aidells dinner chicken sausages. They too make a smoky swiss and mushroom chicken sausage as well as an andouille chicken sausage which is also a big favorite.

For this particular recipe, I wanted to create a quick and healthy dinner to cozy up with on cool autumn evenings. That’s sorta what I did last fall with this Italian sausage and acorn squash bake! For this newer recipe, crisp and tart green granny smith apple just seemed like a perfect fit. It bakes up nicely with rough cut russet potatoes, roasted broccoli, and smoky chicken sausage slices.
The apple slices roast in the oven until sweet and tender while large chopped onion adds layers of caramelized savory flavor. They both add layers of sweet and savory to the dish in their own special way. Here’s how to put it together before we toss it all up to roast…
Cut the Broccoli and Slice The Chicken Sausage
Pre-heat your oven to 450 degrees. Spray a 26 x 18 inch sheet pan with a thin layer of your favorite non-stick spray. Additionally, we’ll toss the ingredients in a little bit of olive oil to be sure nothing sticks. Start by slicing your chicken sausage on a diagonal into half inch slices. Next, cut a large head of fresh broccoli into florets. Add these to your sheet pan along with the sliced sausage.
Cube Russet Potatoes and Slice An Apple
Next, cut two medium russet potatoes into large cubes and add to the sheet pan. Core a large green granny smith apple, removing the seeds, and slice. Add the apple slices to the sheet pan with the vegetables.
Add Sliced Onion To the Apple Chicken Sausage Sheet Pan
Lastly, large dice or slice a large onion and toss in with the sausage and vegetables in the sheet pan. You can use white onion, yellow onion, or red onion. Quartered shallots would make a nice addition as well.
Season and Toss Everything with Drizzles of Olive Oil
When you’ve finished adding the vegetables and sausage to the sheet pan, drizzle everything with fruity golden olive oil. Season with pinches of coarse sea salt and cracked black pepper.
Season with Herbs and Toss Everything To Coat In Oil
Sprinkle on the dried parsley and toss everything together on the sheet pan until evenly coated with olive oil. Alternatively, you might sprinkle with some of your other favorite fresh herbs or dried herbs. You could add herbs such as dill, fresh basil, oregano, or rosemary.
Spread In An Even Layer and Bake
When finished tossing, spread everything out into an even layer. Place the sheet pan in a pre-heated 450 degree oven. Roast for 25 to 30 minutes or until veggies are tender and sausage slices are lightly browned.
When the baking time is up, remove the sheet pan from the oven. Serve hot along with your favorite side dishes.
Simple steamed rice or even a little orzo pasta would both make nice backdrops for the sheet pan chicken sausage. If you wanna keep the fare light, serve with a nice green salad.

- 1 pack Chicken Sausage (6 Links) - sliced – I used Amylu Mushroom Swiss Chicken Sausage
- 1 large Head of Broccoli - cut into florets
- 1 large Onion - large diced or sliced
- 2 Russet Potatoes - cut into 1 inch cubes
- 1 Green Granny Smith Apple - sliced
- 3 to 4 tbsp Fruity Olive Oil
- 1/4 tsp Coarse Sea Salt and Cracked Pepper
- 1 tbsp Dried Parsley
Instructions
- Preheat oven to 450. Line a 26 x 18 sheet pan with foil. Spray lightly with non-stick spray. Slice the chicken sausage links and add to the sheet pan. Cut the fresh head of broccoli into florets and add to the sheet pan.
- Slice the green granny smith apple into slices and large dice the onion. Add these to the sheet pan with the broccoli and chicken sausage slices.
- Dice the russet potatoes into large 1 inch cubes and add to the sheet pan with the rest of the ingredients. Drizzle everything generously with olive oil and sprinkle on coarse salt, pepper, and parsley.
- Gently toss everything together on the sheet pan until nicely coated in olive oil and seasonings. Spread into an even layer on the sheet pan and bake in a pre-heated 450 degree oven.
- Bake for 25 to 30 minutes or until everything is tender and lightly browned. Serve hot.
