Muddled pineapple brings that sweet, acidic tropical summer fruit vibe that goes so well with the earthy agave notes of tequila. A rosemary lemon simple syrup gives this tequila cocktail a delicious lemony twist that makes everything bright and delicious! Let’s put it together…
1. Muddle Fresh Pineapple Chunks
In a glass, muddle fresh pineapple chunks until crushed and juicy!
2. Add Rosemary Lemon Syrup
Pour in fresh rosemary lemon infused simple syrup. (Recipe follows at the very bottom.)
3. Add Fresh Squeezed Lemon Juice
Next, add a splash of fresh lemon juice to the crushed pineapple and rosemary syrup mixture in the glass.
4. Add Tequila To make an easy pineapple tequila cocktail
This tequila from Olmeca Altos has lovely fruity, grassy and peppery notes to it. It’s a pretty neat bottle to have for both sipping and crafting cocktails…
Lastly, splash in your tequila, add ice, and give everything a nice good stir until all the ingredients are totally chilled through and combined.
5. Top This Rosemary Pineapple Tequila Cocktail with: Fizz!
To finish, top the whole thing off with a little summer wheat beer. I used Goose Island 312 summer wheat. It adds a pop of fizz and bubble.
Use your favorite summer wheat beer to top this off (just make sure it is unflavored and plain.) It also gives the cocktail a little bit of body and makes it taste like pure pineapple silk! I promise this finishing touch will be the thing you LOVE most of all…trust me. It’s deeeeeee-li-cious.

Fizzing Rosemary Pineapple Tequila Cocktail

Ingredients
- 1/2 oz Rosemary Lemon simple syrup - recipe follows
- 1/2 oz Lemon juice - fresh squeezed
- 4 chunks Pineapple
- 1.5 oz Good Quality Silver Tequila - I used Altos Tequila
- 1 can Your favorite summer wheat ale (plain, not flavored) - I used Goose Island 312 Urban Wheat ale
Instructions
- In a mixing glass muddle pinapple chunks
- Add silver tequila, rosemary syrup, and lemon juice
- Stir over ice until all is combined and chilled through, about 1 minute
- Pour into a fresh glass and top with fresh ice
- Top off with wheat ale
- Garnish with a pineapple rosemary skewer
Tips For Making Rosemary Lemon Syrup
In a saucepan: Over low heat, combine water and sugar and toss in rosemary sprigs. As the liquid heats in the pan, gently poke rosemary sprigs with a fork. This will kickstart the steeping process and draw out the aromatics of the rosemary. After about 5 minutes (when the sugar is melted through and the rosemary begins to give off fragrance ) toss in the lemon peel. Next, steep this for another 7 or 8 minutes on low. After that, turn off heat and let sit for another few minutes. Chill and store in a tightly covered container and use to flavor cocktails, juices or teas.
Syrup Sidenote
I didn’t want the lemon peel to overpower the flavor of the rosemary. For this reason I did not toss it in right away. Putting it in halfway through gives the rosemary a head start and gently flavors the syrup later on.
