These super simple Easter mimosas make the best Easter cocktails with splashes of zesty citrus juices and ice cold sparkling Champagne.
To get that bold and beautiful Robin’s egg blue color, we’ll add a dash of blue curaçao liqueur, which basically tastes like orange citrus liqueur. While adding a punch of zesty orange flavor, it actually complements the orange juice perfectly and blends seamlessly into the cocktail.
A Stunning Turquoise Blue Color Inspired by the Robin’s Eggs!
This blue liqueur, combined with the orange juice and hint of fresh lime, creates a stunning turquoise blue color in the finished Easter drink.

The ingredients are few and simple making this truly the perfect Easter cocktail to kick off your Easter celebrations this spring. This easy Easter drink will be your new favorite champagne cocktail to serve up at brunch right before the kiddos let loose for the Easter egg hunt!

If you’re making these for a crowd, I highly recommend getting a bigger bottle of (pulp-free) Simply Orange orange juice, the blue liqueur, a small bag of fresh limes, 2 to 3 large fresh navel oranges, and 1 to 2 bottles of champagne or dry (brut style) sparkling prosecco wine (give or take depending on the size of your crowd).
Use Dry Prosecco or Brut Champagne
To give you some idea of portions, one 750 ml bottle of dry brut champagne or prosecco will top off about 4 to 5 of these easy Easter brunch cocktails. Each drink will take up 2 oz of the orange juice.

It also helps to keep your trusty cocktail jigger handy for measuring out your liquid pours. You can use the jigger to measure out the juice and liqueur.
The champagne won’t need measuring since it will be used to top off the drink the rest of the way (leaving a little space at the top to add a garnish/straw). The jigger tool keeps each and every cocktail tasting consistent and exactly the same. It also helps to reduce mistakes and reduce any waste of ingredients, so you have more to pour!
It also helps to set up a few garnishes before you make any of the drinks. In advance, keep a bowl with thin slices of orange wheels that have been each cut in half.
Set a quick Easter cocktail station
Keep two rocks glasses off to the side. Â Fill one with cocktail picks and the other with festive Easter cocktail napkins. Â You can make the station festive by putting these on a gold or silver tray. Surround them with festive grass and little Easter eggs. Â
These keep the drink station neat and help you assemble these fun champagne cocktails with ease. Here’s what you’ll need to make an easy Easter cocktail on the fly… Get a few champagne glasses ready!

The flavor in this easy champagne cocktail is refreshing, zesty, and very vibrant with cool citrus flavors.
The fresh squeeze of lime in this delicious recipe adds balance while the blue curaçao liqueur adds bold Robin’s egg blue color (and sweet citrus taste).  The orange juice completes the drink. It also mimics the flavors of a classic mimosa that anyone can enjoy at brunch on Easter Sunday.

If you do like it sweeter and fruitier, opt to carefully add splashes more of the orange juice and blue curaçao liqueur. I personally think the best way to enjoy these easy Easter champagne cocktails is on the zesty and crisp side, that’s why that little squeeze of lime wedge helps to bring a bright and refreshing edge.
