Quick Fresh Berry Yogurt Cups

If you’re in need of an easy and healthy snack that can easily double as an elegant dessert, you’re in the right place. Big spoonfuls of fresh chopped strawberries + sweet vanilla yogurt are sprinkled with juicy blueberries. Hit it with big dollops of whipped cream and fresh mint to finish off these deliciously quick fresh berry yogurt cups.

I will confess, it took a lot for me to resist filling the entire cup with just whipped cream (I wolfed down at least 3 giant mouthfuls of straight whipped cream while putting these together…and it was hard to stop there).

But, ahem, back to the yogurt. Let’s not forget yogurt is part of this party too! These little cups are just filled with fresh summery berry flavor…and the sweet creamy yogurt is my favorite part (aside from the whipped cream, of course). You might argue that the fresh berries are the best part. My two boys argue that the entire contents are the best part… Either way, these delicious little creamy fruit-filled cups can’t possibly get any easier…

These are definitely an easy snack or fun, fruity dessert you can put together in minutes and they are just colorful, simple and delightful. These fresh berry yogurt cups are great for any occasion, but I like serving them in the summer too as a quick and fun red, white, and blue dessert for the Fourth of July!

Plus big ripe berries just don’t get any fresher or juicier than in summertime. If you went berry picking over the summer, it’s a great way to use up some of those fresh berries!

Chop up about a cup fresh strawberries and gather about the same amount of blueberries and set aside while you mix together the yogurt topping.

Mix Yogurt For Fresh Berry Fruit Cups

dice strawberries

In a medium bowl, mix together yogurt, honey, vanilla, and a little brown sugar until combined. I used plain greek yogurt for this. Now spoon some fresh strawberries into the bottom of each serving glass and top that off with a little yogurt mixture. Now add some blueberries and top with the rest of the yogurt. Continue working in layers until you run out of ingredients.

If you’re a big summer strawberry-lover like I am, you can probably sneak strawberries into quite a few things…like say, maybe this strawberry-mango smash cocktail or this strawberry spinach salad, or heck, why not.. these strawberry lime rum shots! A big reader favorite is actually this strawberry basil bourbon cocktail complete with strawberry basil cocktail ice. Yep, berries galore!

Back to the fruit cups! On a quick sidenote: I only got about three thinner layers because I used wider glasses. Everything spreads in wider glasses so if you want more little layers, use skinnier/taller/longer glasses. This might help with stacking everything a little higher, if you want more layers.
