Mrs. Claus’s Sparkling Pomegranate Martini Christmas Cocktail

- 1½ oz Good Quality Vodka
- ½ oz Green Apple Liqueur - I used Classica Apple Liqueur
- 1 oz Simple Syrup - Lemon Ginger Syrup would work nicely in here too!
- ¾ oz Fresh Squeezed Lemon Juice
- 1½ oz Izze Pomegranate Sparling Juice
- Prosecco or Champagne - For topping off
- Red and Gold Sanding Sugars or Crystals - For cocktail rim
Instructions
- Spread a mixture of gold and red sanding sugars on a flat surface such as a paper plate or wide flat dish. Swipe martini glasses with a lemon wedge or dip them in a little syrup and then dip into the sanding sugars. Turn the glasses as you dip to coat the rim of the glass all around. Set glasses in the freezer while you prepare the cocktail.
- Grab a cocktail shaker with a lid and splash in the simple syrup along with the freshly squeezed lemon juice. Splash in your favorite good quality vodka and add in the green apple liqueur.
- Fill the cocktail shaker about 3/4 of the way with fresh ice cubes. Replace the cover and shake these four ingredients together really well until totally combined and chilled. Strain the chilled vodka mixture into your chilled martini glass.
- Top this mixture off with a splash of Izze Pomegranate sparkling juice. Give everything a gentle stir with a bar spoon and top off the rest of the way with nicely chilled sparkling prosecco wine or chilled dry brut or rosé style champagne. Serve cold.
