Champagne Cocktail Inspiration
When I think of classic or traditional champagne cocktails, the French 75 immediately comes to mind. This is one of the first cocktails I ever tasted with champagne. I remember being so impressed that such simple ingredients could form into such a delicious, refreshing, and balanced classic cocktail.
A little gin, fresh lemon juice, and sugar are combined with a generous splash of fizzing champagne and a little lemon peel. While I see most websites list this traditional drink with simple syrup, I always recall enjoying this great drink with a sugar cube dropped in at the bottom. It would slowly melt away into the cocktail mingling with the ingredients making it so much fun to drink… It’s still on my list of favorite New Year’s Eve cocktails to date.
A Festive Champagne New Year’s Eve Cocktail with Vodka
Being so inspired by classic champagne cocktails, I wanted to create my own fun and glitzy New Year’s Eve cocktail that would really celebrate this time of year. This glittering rose gold cocktail still has all the basic components of our classic champagne cocktail: a little sweetness (from fresh lemon ginger syrup), (acidity) from fresh lime juice, added spirits (in this case vodka), and a rose champagne float! A perfect libation to mark the festive celebrations of a New Year’s Eve party.
The result is a delicious sparkling rose gold champagne cocktail that gets glammed up with edible glitter cocktail powder. To really punch up the look and feel of this festive drink, you’ll want to add a little edible dust or edible glitter to the champagne flutes or coupe glasses. I chose to go with a stunning metallic glitter powder in rose gold because it so perfectly matches this pink and rose gold New Year’s Eve centerpiece I did!
You might choose to sprinkle in pink, gold, silver, or white pearl iridescent powders into your bubbly champagne cocktails. They are all so darn pretty, no matter which one you pick! It’s so hard to choose, but I promise you they add a stunning visual effect to the cocktail that makes it so gorgeous and so fun to sip for the holiday season. Aside from this special ingredient, the rest of the delicious recipe for this New Year’s Eve cocktail with vodka combines rather easily.
Prepare A Gold Cocktail Rim
This is optional, but I love to give cocktails that extra touch of love. To incorporate the look of gold, I’ll dip my cocktail glasses in a little bit of light corn syrup and into a flat plate with gold sanding sugars. It really creates a fun look for festive holiday cocktails like this! You can see I used a cocktail rim to dress up this fun Christmas champagne cocktail too!
Next, I immediately place my glass in the freezer. My suggestion when doing this is to only dip the rim in slightly. You don’t want a heavy coating of this to run down the sides of the glass later on. You only need a slight amount of syrup for the sugars to adhere. The freezer will help to set it the rest of the way and provide nice chilled glasses our New Year’s Eve cocktail.
Make a Champagne New Years Eve Cocktail with Vodka
To prepare the cocktail, grab a cocktail shaker and squeeze in the fresh juice from two lime wedges. Next splash in a little lemon ginger syrup. This is optional and, of course, you could use plain simple syrup. I think, however, that the ginger lemon syrup adds delicious hints of citrus and spice that complement the sparkling apple juice we’ll add in later on.
It’s also makes up a nice flavor combination for a sparkling winter cocktail. If you haven’t made ginger syrup before, it’s super easy and can be made ahead at any point. It turned out quite well in this pretty Empress gin cocktail! See below in the recipe card for instructions on how to make it.
Add Vodka and Fresh Ice To the Cocktail Shaker
Once you’ve added in the fresh lime juice and syrup, add about an ounce of good quality vodka. Fill the cocktail shaker about three-quarters of the way with ice and replace the cover on the cocktail shaker. Shake these three ingredients together vigorously until chilled and combined. Strain the mixture into your chilled cocktail glass.
Add Edible Glitter To The New Year’s Eve Cocktail
Now comes a little bit of glitz. This is what turns our champagne New Year’s Eve vodka cocktail a glittery rose gold color! If using, add about half a bar spoon filled with edible glitter powder to the cocktail glass.
I like to do this before I pour in any effervescent liquids. This helps everything to sort of mix up as you pour in the bubbles.
You can see it has completely turned the cocktail a rose gold pink color! So gorgeous and fun!
Splash In Sparkling Apple Juice
Next splash in a little chilled sparkling apple juice. When I saw that Izze sparkling juices released a holiday variety collection, I just had to try it out! They include three flavors, but the Izze sparkling apple juice makes the most wonderful bubbly mixer in this easy recipe.
Top off your festive pink vodka cocktail with Bubbly Rosé Champagne
Lastly, top off the New Year’s Eve cocktail with nicely chilled rose champagne. Optionally, you could use brut champagne. Seeing as how our New Year’s Eve decor theme is unfolding in shades of pink and gold, I thought the rosé would make a fitting finish!
Once you’ve finished adding the sparkling apple juice and champagne, give everything a gentle stir with your bar spoon.

Pink Apple Champagne New Years Eve Cocktail with Vodka

Ingredients
For The New Year's Eve Champagne Cocktail:
- 2 wedges Fresh Lime Juice
- 3/4 oz Ginger Lemon Syrup or Simple Syrup - see below for recipe
- 1 oz Good Quality Vodka
- 2 oz Sparkling Apple Juice - I used Izze Sparkling Apple / chilled
- Rosé Champagne - for topping off / chilled
- Edible Glitter Powder - in rose gold, gold, silver, or pink!
- Light Corn Syrup or Simple Syrup - for dipping / cocktail rims
- Golden Sanding Sugars - for dipping / cocktail rims
For The Lemon Ginger Syrup:
- 6 slices Fresh Ginger Root
- 2 strips Fresh Lemon Peel
- 1 cup Water
- 1 cup Sugar
Instructions
Prepare the Ginger Lemon Syrup:
- Pierce the ginger slices and lemon peel with a fork. Combine all ingredients in a small sauce pan stirring over the heat until sugar is melted completely into the water. Bring to a high simmer then put the lid on and reduce heat to low.Â
- Continue simmering on low for 10 to 15 minutes. Strain and let cool then transfer to an airtight container. Use within 2 to 3 weeks.
Prepare the New Year's Eve Champagne Cocktail:
- Sprinkle a few tablespoons of the golden sanding sugar on a flat surface such as a paper plate. Lightly dip your cocktail glass in a bit of the syrup and then immediately dip in the golden sanding sugars. Place in the fridge or freezer to chill and set.
- In a cocktail shaker, squeeze the juice from 2 wedges of fresh lime. Splash in the lemon ginger syrup or simple syrup and add in the vodka. Fill your shaker about 3/4 of the way with fresh ice and replace the cap. Shake these 3 ingredients vigorously until totally chilled and combined.
- Strain the chilled vodka mixture into your prepared cocktail glass and (if using) add about 1/2 a bar spoon full of edible glitter powder. Gently stir in.
- Splash in the sparkling apple juice and finish by topping everything off with chilled brut rosé champagne. Serve immediately, serve chilled.
