As soon as spring hits and we launch ourselves, our styles, and our tastes into the warm weather seasons, stunning and colorful refreshing gin cocktails always bump their way up on the list for me. So, for a fun and flirty spring or summer cocktail, I thought that a fresh lemon juice and ginger drink would make a perfect pair in this cool empress gin martini.
I flavor the cocktail even further with a delicious splash of Apologue Celery Root Liqueur. It has a simple and fresh herbaceous quality that melts right into gin cocktails. Let’s look at how to mix up this easy and refreshing lemon ginger cocktail you can sip and enjoy to the last drop.
Make fresh ginger syrup For the Lemon Martini Empress Gin Cocktail
Grab some fresh thin slices of ginger root along with a few strips of fresh lemon peel and combine these in a small saucepan. I find that best way to extract lots of flavor in minimal time is to poke and puncture the lemon and ginger with a fork in the pot a few times to help them release their flavor and infuse the syrup even faster. To this, add in equal parts sugar and water.
I usually just do 1 cup water to 1 cup of sugar. Stir everything together as you bring this mixture to a simmer. When mixture comes to a simmer, put the lid on and reduce heat to low. Continue simmering on low for 10 to 15 minutes. Strain and let cool then transfer to an airtight container. Use within 7 to 10 days.

The first thing to do is grab a mixing glass or cocktail shaker and splash in the pretty purple Empress gin. Next, splash in fresh lemon juice.
When the citric acid from the lemon juice combines with the purple gin, it will activate a stunning color change. You’ll see our bright violet gin swirl into shades of magenta and deep pink.

Next, add in the ginger lemon simple syrup made with fresh ginger and lemon peel plus a splash of Apologue celery root liqueur. This will elevate the flavor of our simple empress gin cocktail with the bright spiced flavor of ginger and the herbaceousness of the liqueur. It’s also great if you’re like me and you just love a good old fashioned lemon ginger syrup cocktail fancied up with unique spirits like this.
If you don’t have Apologue celery root liqueur, you can still make the cocktail without it by simply using the Empress purple gin as the main spirit in the cocktail flavored with syrup and fresh citrus. Taste and adjust the lemon juice and syrup as needed before pouring and serving.
Add ice to your cocktail shaker and shake to combine
Lastly, add in some fresh ice to fill about three-quarters of the way and shake everything together until completely chilled through and combined. If desired, rub the rim of a martini glass or coupe glass and dip in a little pink sanding sugar.
It’s a nice touch for adding a little spring fling flare to our soft pink-petal inspired Hydrangea’s Kiss cocktail. You could also keep it simple and float some rose petals or edible flowers on top if you like! All of these little touches make for a simple yet beautiful cocktail.

For The Hydrangea's Kiss Cocktail
- 1¼ oz Lemon Ginger Syrup - Recipe Follows
- ¾ oz Fresh Lemon Juice
- ½ oz Apologue Celery Root Liqueur
- 1½ oz Empress 1908 Gin
For The Lemon Ginger Syrup
- 6 slices Fresh Ginger Root
- 2 strips Fresh Lemon Peel
- 1 cup Water
- 1 cup Sugar
Instructions
Prepare the Lemon Ginger Syrup:
- Combine all ingredients in a small sauce pan and stir over the heat until sugar is melted completely into the water. Bring to a high simmer then put the lid on and reduce heat to low.Â
- Continue simmering on low for 10 to 15 minutes. Strain and let cool then transfer to an airtight container. Use within 7 to 10 days.
Prepare the Cocktail:
- Splash 1908 Empress gin in a cocktail shaker. Next, splash in the fresh lemon juice followed by the homemade lemon ginger syrup.
- Lastly, splash in the Apologue Celery root liqueur and fill your shaker 3/4 of the way with ice. Put the lid or cap on.
- Shake thoroughly until ingredients are all incorporated, combined, and nicely chilled.
- Grab a martini glass and rub with a lime wedge then dip in a little pink sanding sugar, if desired. Pour your chilled and mixed cocktail into the martini glass and garnish with a fresh lime wheel and some edible flowers, if available. Enjoy while cold.
