One of my favorite things about this cocktail is actually the fact that you build it right in the glass. No cocktail shaker or mixing glass needed.

Everything comes together in one single vessel. For this reason, I like to use a rocks glass or any glass with a wide mouth so you can comfortably get in there to muddle, pour, mix, and sip. My other favorite thing is the sweet and salty lime zest rim we’re gonna make. It’s super simple to do and adds a really nice touch. Here’s how we get it started…

1. Make A Sweet and Salty Lime Rim for your light rum cocktail

Gently zest the skin of a fresh lime and collect until it amounts to roughly 1 teaspoon or so. Use a citrus zester for this job as the skin of the lime is not very deep and you don’t want to hit the white stuff (pith) underneath. It will introduce bitterness which we don’t want. We just want the bright green zest! I used my handy dandy microplane for this job.

Collect the lime zest and add it to a small bowl along with coarse sea salt and a little plain white sugar. The mixture will get slightly moist from the zest. Mix these together with a small spoon and spread evenly on a plate.

2. Rim Your Glass with a zippy lime zest rim

Rub the rim of your rocks glass with a fresh lime wedge and dip it in the sweet and salty rimming mixture we just created. Swirl and move the glass around on the plate to coat the rim of your glass all the way around.

3. Muddle Fresh Blueberries for this easy light rum cocktail

Now add half of the blueberries to your rimmed glass and muddle them until the skins are broken and the flesh inside is released. It will start to tint the rest of the liquids a light bluish purple color as you continue to build the cocktail.

4. Combine, Add Ice & Stir

Next, add in the rest of your ingredients. Start by squeezing in the juice of one lime wedge. After that, go ahead an pour in the rum and simple syrup.

Make Simple Syrup To Sweeten Your Drinks

  • Easily make simple syrup by combining equal parts water and sugar (for example 1 cup of water to 1 cup of sugar).
  • Add this to a small pot on the stove and heat it to combine, stirring.
  • Remove from the heat when sugar is completely melted in and mixture is clear.
  • Cool your syrup completely before adding it to any cocktail.
  • Store in an airtight container for up to 4 weeks.
  • Always keep a batch in fridge to make delicious cocktails any time!

5. Top off this summer rum drink With Sparkling Water

Lastly, add ice to your glass about halfway and stir with a spoon until thoroughly chilled and combined.

Now, finish off your summer rum cocktail with lime by topping it with a splash of sparkling water/soda water. Add a few extra cubes of ice in, if desired, and give it another gentle stir.

6. Garnish your summer rum cocktail with lime and fresh berries

Finish everything off by creating a blueberry garnish. Skewer the remaining blueberries onto a pick and add it to your glass. Drop in some fresh lime wheels and more blueberries to finish.

Common measurements on a jigger will include a 1 oz marking, a 1 1/2 oz marking and a 2 oz marking so you can follow a recipe precisely and deliciously.
  • Other helpful tools would include a bar spoon, a muddler, a citrus zester, and a mixing glass/cocktail shaker to combine ingredients before pouring and serving. Consider having a small cutting board and knife nearby for slicing up fresh fruit and garnishes.

Ingredients
  

  • 1 tsp Fresh lime zest
  • 1 tbsp Sugar
  • 1 tbsp Coarse sea salt
  • 1/4 cup Fresh blueberries
  • 1 Lime Wedge - for squeezing in
  • 1 oz Simple Syrup
  • 1 1/2 oz Light Rum - such as Bacardi
  • 1 can Sparkling Water / Soda Water - for topping off

Instructions
 

  • Using a lime zester, gently zest the skin of a fresh lime collecting about 1 tsp of it. Add this to a small bowl. Add coarse sea salt and sugar to the same bowl and stir with a small spoon until combined. Mixture will be slightly moist from the fresh zest. Spread this in an even layer on a small plate.
  • Grab a rocks glass and rub the rim with a lime wedge then dip it in the lime zest rimming mixture. Move the glass around so the entirety of the rim is coated.
  • Drop about half the blueberries in your glass and muddle them until skins are broken and crushed. Add in the juice of one lime wedge, simple syrup, and rum. Top with ice and stir well with a bar spoon until chilled and combined.
  • Add a few more cubes of fresh ice if desired and top off with sparkling water. Give it a gently stir with the spoon once more to stir in the fizz. Skewer the rest of the bluberries on a pick and garnish with lime wheels.
