Easy Orzo Pasta Salad Recipe with Feta & Kalamata Olives

- 2 cups Orzo pasta - cooked, strained, and slightly cooled
- 2 tbsp Fruity Olive Oil
- 3/4 cup Kalamata Olives - Sliced or or rough chopped
- 4 or 5 sprigs Fresh Basil - leaves rough chopped
- 1 cup Cherry tomatoes - sliced in half
- 4 oz Feta cheese - cut into cubes
- 2 tsp Balsamic or Apple Cider vinegar
- 1 tsp Coarse Salt + Ground Pepper
Instructions
- Prepare orzo pasta according to package directions or by simple dropping into a sauce pan of boiling water with some olive oil added. Cook pasta until soft and chewy on the outside but still slightly firm in the center. About 7 to 10 minutes. Remove, strain, and transfer to a large mixing bowl.
- Let the pasta cool slightly and then add in cherry tomatoes, kalamata olives, feta cheese, and chopped basil.
- Drizzle in olive oil and balsamic vinegar or apple cider vinegar. Season everything to taste with salt and pepper. Toss everything together until combined. Garnish with fresh basil and serve.
