These are super tasty and so easy to make! I usually make these with my boys and they just love putting the buttons and eyes on the gingerbread shapes! It’s the best part! My favorites are actually just the plain round cutouts. I’ll poke a whole in the round shapes with a straw at the top, pull some ribbon through, and turn a few into ornaments.. It’s always fun to add a few to the Christmas tree!

To help myself out with the handling of this dough, I actually go ahead and chill it in the fridge for 45 minutes or even an hour. This makes it a little easier for me handle the dough.

If you are looking For Easy and Quick Gingerbread Cookies…

If, however, you are short on time and need to keep these quick, simply roll out right away and bake. Keep in mind that the dough is made from butter which means the warmer it gets, the harder it is to handle. Roll out on a flour dusted work surface such as a marble or stone counter to help keep it as cool as possible.

The gingerbread dough tends to puff up slightly more in the oven if they are not chilled first. If you prefer to keep a nice crisp edge on your cookie shapes, don’t skip the chilling part. You can also place the dough in the freezer to chill it faster.

I will mention that in addition to keeping a better shape for the cookie, the chilling also makes rolling, cutting, and transferring the dough to cookie sheets easier.

Having said that, if you are looking for a quick gingerbread cookie recipe and don’t mind a puffier overall shape, make this dough and bake straight away! I do this with my kids when we crave these easy quick gingerbread cookies on the fly! We tend to keep the process short and sweet! Just mix, roll, cut, decorate, and devour!

Make the dough for these easy gingerbread cookies

  • In a bowl, combine dry ingredients. Whisk flour, baking soda, baking powder, salt, ground cinnamon, ground ginger, and ground clove until combined.
  • Combine wet ingredients in a separate bowl. To do this, grab your stand mixer or hand mixer and beat butter, brown sugar, and egg until well blended. Add vanilla and molasses and mix until combined.
  • Now add in the dry ingredients little by little until well combined with the whipped butter mixture and dough starts to pull away from the sides of the bowl.
  • Divide your quick gingerbread dough in half. Form into two balls and wrap each half in plastic wrap. Chill gingerbread cookie dough in the fridge for about 45 minutes to an hour.
  • Preheat oven to 375 degrees. Dust your surface or countertop with a light dusting of flour. Dust your rolling pin with flour as well.

Roll & Cut Gingerbread Cookies

Roll out chilled gingerbread dough until it’s about 1/4 inch thick. Use holiday and Christmas cookie cutters to cut into fun shapes. With a thin spatula, transfer cut cookie shapes to a cookie sheet or sheet pan lined with parchment paper or (my personal favorite) a non-stick baking mat.

Now comes the fun and colorful part! Simply give your quick gingerbread cookies a quick dusting of sanding sugars or Christmas sprinkles in fun colors and then bake! The sprinkles will adhere as the gingerbread cookies bake. Bake quick gingerbread cookies at 375 degrees F for 8 to 10 minutes. Remove from baking sheet and let cool.

Alternatively, you could bake them plain and then give them a quick coating of white icing with the back of a spoon. If coating with icing, let cookies cool completely on a rack and then top with simple white icing.

Now add on your holiday sprinkles and then let set overnight for the icing to harden. Lastly enjoy! Ingredients
  

  • 3 cups All purpose flour - plus more for dusting and rolling dough.
  • 1/4 tsp Salt
  • 3/4 tsp Baking Soda
  • 1 1/2 tsp Baking Powder
  • 1 1/2 tsp Ground Cinnamon
  • 1/4 tsp Ground Cloves
  • 1 tbsp Ground Ginger
  • 8 tbsp Unsalted Butter
  • 3 tsp Vanilla
  • 3/4 cup Brown sugar
  • 1/2 cup Molasses
  • 1 Egg

Instructions
 

  • In a bowl, whisk flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves until combined. In a separate bowl, beat butter, brown sugar, and egg until well blended. Add vanilla and molasses and mix until combined.
  • Little by little, mix the dry ingredients into the butter/sugar/molasses mixture until combined and blended. Divide your gingerbread dough in half. Form into two balls and wrap each half in plastic wrap. Chill gingerbread cookie dough in the refridgerator for about 45 minutes to an hour.
  • Preheat oven to 375 degrees. Dust your surface or countertop with a light dusting of flour. Dust your rolling pin with flour as well. Roll out chilled gingerbread dough until it's just slightly thinner than 1/4 inch thick. Use cookie cutters to cut into fun shapes. With a thin spatchula, pick them up and place them atleast 1 inch apart on a greased baking sheet or lined with a nonstick baking mat. Sprinkle cookies with red and green sugar or holiday sprinkles.
  • Continue dusting surface and rolling pin with flour as needed to stop dough from sticking. Bake cookies at 375 degrees for 8 to 10 minutes. Remove from baking sheet and let cool.

Notes

Since the dough has a good amount of butter in it, I find that chilling the dough in the fridge a little while makes it easier to handle. It rolls out easier as well.
