To Make This Easy Dragon fruit Mango Salsa You’ll Need:
- Large Heirloom (or vine ripe) Tomato
- Ripe Mango (peeled and cubed)
- Dragon fruit (peeled and cubed)
- Red Onion (small diced)
- Minced Fresh Cilantro
- Fresh Squeezed Lime Juice
- Coarse Salt and Pepper for seasoning
Cubing and Cutting Fresh Tropical Fruit
If you’ve never worked with fresh dragon fruit before, don’t worry! Its flesh is soft, juicy, and tender. It’s very easy to peel and cut!
There is no large pit or seed in the center. The bright magenta pink skin on the outside peels easily and comes right off. Just slice in half and run your knife through to cube into small uniform pieces.
The same goes for cubing the mango. Cut into large pieces to the left and right side of the large pit inside the mango. Run your knife through the large pieces of mango leaving the skin on while making vertical and horizontal scores (being careful not to cut through the skin).
Push the fruit inside out by pressing it up from the bottom and voila! You have quick cubed mango chunks! Run your knife across the skin to remove the cubed fruit and collect in a medium bowl.
Make Fresh Dragonfruit Mango Salsa
Add the cubed dragon fruit to the same bowl with the mango. Now toss in the diced fresh tomato along with the chopped red onion.
Add Fresh Cilantro and Seasonings
To this mixture add two tablespoons of fresh minced cilantro and season with coarse salt. I added around 1/4 teaspoon of coarse salt to my mixture with a little pinch of cracked pepper. If you like less salt, start with an 1/8 of a teaspoon (pinches) of coarse salt and continue adding until your desired level of seasoning is achieved.
Make Fresh Salsa Flavors Shine with Fresh Lime
Lastly, add in the fresh squeezed lime juice. This adds so much zest and vibrance to the rest of the mango salsa ingredients. The lime juice wakes everything up and makes it tangy, zesty, and bright!
I added about 1/4 teaspoon of fresh lime to our dragon fruit mango salsa recipe and it was enough to pull everything together and make it delicious. If you feel like it’s not coming through enough, add more as desired by squeezing in a wedge of fresh lime juice at a time, tossing together, and tasting.
