- 2 cans Chunk Chicken Breast - Liquids Drained – I used two Kirkland brand 7 oz cans
- ½ cup Chopped Almonds
- 2 stalks Celery - diced
- 1 apple Crisp Red or Green Apple - diced
- 2 tsp Cajun Seasoning
- 1 tbsp Dried Parsley
- 4 tbsp Mayonnaise or Miracle Whip
- 2 tbsp Sour Cream
Instructions
- In a medium bowl, and 2 cans of drained chunk chicken breast and begin to break up with a fork until canned chicken is of uniform pieces.
- To the same bowl with the canned chicken, add in chopped almonds, chopped celery, and chopped apple.
- Sprinkle in the dried parsley plus the cajun seasoning. Add in pinches of cracked pepper if desired. Top off with dollops of mayonnaise or miracle whip. Add in the sour cream. With a large spoon or spatula, combine all ingredients until creamy and evenly combined.
- Taste and adjust the seasonings as desired and serve over toast points, crackers, or as a lunchtime sandwich or salad. Store leftovers in an airtight container and consume within 3 to 5 days.
