The rest comes together easy with little white pearl sprinkles for eyes and little heart sprinkles for a nose! Cool at room temperature or refrigerate until chocolate is set. Serve on a little platter sprinkled with bright pink sanding sugar for a simple but decadent Easter chocolate treat!

Prepare your favorite box of moist brownie mix according to package directions. I baked mine in a greased 9×9 pan. While the brownie mix bakes according to package instructions, prepare the bunny ears!

Make Bunny Ears For Your Easter Brownies

To make the bunny ears, grab sliced almonds and dip them! Use meltable white chocolate coins and melt according to package directions in a microwave-safe bowl. I melted mine in 15 second intervals stirring in between, heating only until just melted. If you use a 9×9 baking pan, you’ll end up with about 30 to 36 pieces, so you’ll wanna dip enough sets of ears for each cube plus some extra to allow for breaking/cracking or any other mistakes. Set aside to dry.

Placing a piece of wax paper or parchment paper on the counter, grab pieces of oval-shaped sliced almonds and swipe them into your melted white chocolate using a quick motion. You can use food tweezers or garnishing type food tongs to help you gently swipe them in, if desired. Lay flat on the parchment paper to dry. They will dry fairly quickly. Set aside.

Cut Your cooled brownies into even squares

Once cooled at room temperature, cut your brownies to form bite size pieces. You can figure it out according to your pan size. If using a 9×9 baking pan like I did, then it works out pretty even. You’ll cut your brownies into 9 equally-sized larger squares. To form the even bite-sized cubes simply quarter each of the larger 9 squares into 4 small cubes. Your 9×9 pan should now yield about 36 brownie cubes.

To help make clean cuts into the brownies, dip your knife in water every time you make a cut from beginning to end wiping the knife clean before dipping back into the water. This should give you pretty even cubes for dipping into the chocolate. Also, greasing your pan very well before pouring the batter and baking will ensure you don’t have any trouble scooping out your cubes in the end.

Dip & Decorate Chocolate Bunny Ear Brownie Bites

The last part is the most fun! Dip and decorate! Now that the brownies are completely cooled and cubed, melt about 1 cup of semi-sweet chocolate chips in 15 second intervals with a tablespoon of coconut oil added. Stir in between each interval until melted and silky smooth. Place a fresh sheet of parchment or wax paper on the counter and using a fork, place each brownie cube into the melted chocolate and hold for a few seconds to let all excess chocolate drip off. Gently place down on the parchment and repeat the process melting more chocolate as needed.

Once you have dipped about 3 to 4 pieces, press in your dried white chocolate almond bunny ear pieces. I like to gently press mine into the freshly chocolate-coated brownie in a standing-up position.

To create the super simple little cute face, I used white pearl ball sprinkles for the eyes. These are sometimes called pearlized sprinkles or sugar pearls. Lastly, I used flat pink heart sprinkles for the nose. That’s it! Once you press the ears in, drop two little white pearls and a heart in the center to create eyes and a bunny nose. Leave these out to dry at room temperature for a few hours.

Ingredients
  

  • 1 box Your Favorite Moist Chocolate Brownie Mix - Prepared according to package directions
  • 1/2 cup White Chocolate Coin Melts
  • 1 small bag Sliced Raw Almonds
  • 1 cup Semi-Sweet Chocolate Chips
  • 1 tbsp Coconut Oil
  • White Sugar Pearls / White Pearl Sprinkles
  • Flat Heart Sprinkles

Instructions
 

  • Prepare brownie mix according to package directions. Pour batter into well-greased 9×9 baking pan and bake according to package directions. Remove when done baking and let cool thoroughly.
  • While the brownies cool, prepare Easter bunny ears by melting white chocolate/candy melts or coin melts according to package directions. I like to put them in a microwaveable bowl and melt in 15 second intervals stirring in between until just melted. Pour nicely rounded oval almond slices into a small bowl and begin swiping them into the white chocolate to coat the tops of the almond slices and set on parchment or wax paper to air dry.
  • Cut your cooled brownies into 9 larger evenly shaped squares and then cube those into 4 smaller squares creating about 36 bite sized cubes. Melt your semi-sweet chocolate chips along with the coconut oil in a microwave-safe bowl in 15 second intervals stirring in between. When chocolate is silky and melted return to the counter. Using a fork or candy dipping tool, dip each brownie into the melted chocolate. You could also hold brownie over the melted chocolate and use a spoon to scoop melted chocolate and pour it over the brownie to coat it. Be sure to let all excess chocolate finish dripping then place each cube on parchment to dry.
  • Working in groups of 3 or 4 brownies at a time, dip them in the chocolate then press the dried and set sliced almond bunny ears into the top of each brownie cube while the dark chocolate is still wet. Drop two pearl sprinkles in the center and a heart sprinkle to create a face while the dipped brownie is still wet. Use food tweezers/garnishing tongs to help with the placement of the face sprinkles, if desired.
  • The decorations and the chocolate brownie will all set together as they dry at room temperature in your kitchen. You can also refrigerate to set the chocolate and decorations sooner. Serve when the chocolate and decorations are set. Enjoy as a delicious chocolate-lovers Easter bunny treat.
