This zesty and zippy spicy salsa recipe is easy, delicious, and loaded with the simple Mexican flavors that we just can’t get enough of. Green tomatillos are grilled at a high temperature to add char and flavor. A little fresh lime and onion tie everything together in this easy grilled salsa verde with jalapeño and cilantro.

Prep + Wash Tomatillos for our salsa verde
Before we get our spicy salsa on, we’ll take a quick minute to prep the tomatillos by removing their husks and washing them well.

Next, pre-heat your grill and rub your rack or grill top with a little oil. Now place the tomatillos on top taking care to turn them on all sides with tongs so that they char and cook all around. Place your jalapeño pepper (to add spice, if using) and onion on the grill at this time too.
I did this on high heat continuously turning until the tomatillos were brown all around and removed them when there were no more bright green spots left on the skin. When they were soft and slightly tender to the touch, I removed them to a separate platter and set aside until they were all done. I let everything cool for about 10 minutes before adding to the food processor.

To mix up the salsa, add the cooked tomatillos to a food processor with the onion, spicy jalapeño pepper, and cilantro plus a clove of garlic. Now add in a few tablespoons of water and blend together until just combined. It should have a saucy consistency without being watery.

- I love the idea of serving this as part of a trio! If you have a little set of bowls, you can put out a triple spread with a red salsa, green salsa, and guac! Three dips just adds to the fun!
- Serve with a classic lime margarita or Mexican-style lager! I like to squeeze a little lime and drop some salt right into my bottle and pour! These go together with salsa like peanut butter and jelly… simple but oooooh soooo good.
Spicy Salsa Recipe For Grilled Tomatillo Salsa Verde

- 6 whole Tomatillos
- 1 Jalapeño
- 1 medium Onion
- 1/3 cup Fresh Cilantro - or more if desired
- 1 clove Garlic
- 1 or 2 tbsp Water
- 1 or 2 wedges Fresh Lime
- Coarse Sea Salt
Instructions
- Remove the dried leafy husks from your tomatillos and wash well with water.
- Rub your grill or grill top with a little oil. Pre-heat and add tomatillos. Char and roast the tomatillos on your grill by turning until cooked and browned mostly all around. Add the onion and jalapeño and brown these as well. I cut my onion in half and then set it on the grill. I left the jalapeño whole. When there are no bright green spots left on the tomatillos and they are tender when touched with the tongs, move to a separate platter and set aside. Let cool for 10 minutes or so.
- In a food processor combine the tomatillos, onion, garlic, cilantro, and a little bit of water. Blend until just barely combined. Now add in a squeeze or two of fresh lime juice and sprinkle in some salt. Season to desired taste with salt and give it a few more pulses. Consistency should be chunky and saucy but not watery.
- Serve by pouring into a bowl alongside your favorite corn chips. Garnish with fresh cilantro, lime wedges, and a little more chopped onion over the top, if desired.
