I love the idea of peaches and bourbon in the summer, especially mixed into a refreshing chilled tea. I gave this a fresh flavorful twist with a dash of thyme-infused simple syrup. It adds a most special sweet touch to the tea and complements the bourbon nicely. This chilled peach bourbon drink has a nice fresh-brewed tea flavor that is quenching and refreshing.
Use Fresh-Brewed Peach To make delicious peach bourbon tea
I brewed the tea in advance and chilled it until it was nice and cool for mixing into the cocktail. You can use any peach-flavored tea you like. Mine was a peach-flavored green tea which produced a lighter color in the cocktail. If your peach tea contains black tea leaves, the color may be darker (and the flavor more robust). It will vary depending on how long you steep your tea. That is the beauty of tea! All varied, different and delicious!
The Thyme Simple Syrup adds flavor and refreshment
Thyme is a relative of mint and oregano and has a mild fragrance, almost like dried leaves (even though it’s fresh and green). I find it is more similar to oregano in fragrance than mint. It has beautiful thin but wood-like stems that curve and curl as they grow. When steeped and infused into a syrup, it adds a natural, earthy sweetness to drinks. This would be delicious to sweeten hot tea as well. I would put it in a chamomile or ginger tea with lemon!
An Easy Refreshing Peach Bourbon Drink To Sip All Summer long…
In a mixing glass, add the fresh-brewed and chilled peach tea along with the thyme simple syrup and fresh-squeezed lemon juice. A little acid from the citrus will brighten the cocktail and balance the sweetness.
Splash in your favorite good quality bourbon. Add ice and give it a stir with a bar spoon until everything is combined and nicely chilled through. The iced tea and bourbon go together like peanut butter and jelly. A perfect natural combination that really tastes like summer.
Pour into a tall glass over fresh ice and enjoy.
Garnish this easy peach bourbon drink with fresh thyme sprigs and peach slices. You can use fresh peaches or canned peaches. If you use canned, just strain them and toss a couple in your glass or on the rim.

- 4 oz Peach tea - already brewed, unsweetened and chilled
- 3/4 oz Thyme simple syrup - recipe follows
- 3/4 oz Lemon juice - fresh-squeezed
- 2 oz Bourbon - your favorite quality good bourbon
Instructions
- In a mixing glass pour in iced tea, thyme syrup, lemon juice and bourbon.
- Add ice and stir with a bar spoon until everything comes together and gets nice and chilled through.
- Strain into a tall glass with ice.
- Garnish with peach slices and fresh thyme.

Thyme Simple Syrup for Drinks and Cocktails

Ingredients
- 1 cup Water
- 1 cup Sugar
- 8 sprigs Thyme - fresh
Instructions
- In a small sauce pan, add water, sugar and thyme.Â
- Heat over a medium flame until sugar is completely dissolved into the water and mixture turns clear. Â
- On low heat for one extra minute, gently press down on thyme sprigs and bruise them to release their fragrance and flavor.
- Turn heat off and cover. Let sit and steep for an additional 8 minutes.
- Once cooled, strain into a glass jar.
- Chill and keep in a jar with a tight-fitting lid. Use to flavor cocktails, juices and teas.
