When I look at some of these photos, I can’t help but mention what a miracle it was that I even got clear pictures that day. We had the rainiest October week here in Chicago, and the sky was so dark with cloud cover. It was like a bedtime sort of darkness—all day.

Even the craziest weather doesn’t change the fact that these cute little baked rings are always a big hit for fall here at home. They aren’t overly sweet, the batter is made with simple ingredients, and (best of all) they’re baked not fried.

Aside from keeping the donut batter moist and delicious, the pumpkin gives the baked donuts a nice hint of warm orange color. The baked pumpkin maple donuts look and taste like fall. I could literally make these all season and just get into a donut habit: bake, pour coffee, dunk, devour, bake, pour coffee, dunk, devour…but then after a while I might crave… a gingerbread version for the holidays!

Hmm…that could be something to start thinking about next.

Okay, seriously though, eyes back on the prize. Let’s turn our attention back to these sweet little pumpkin donuts! To make the batter, we’ll start off by putting together the dry ingredients…

First things first. you’ll want to grease your donut pan and set that aside. Pre-heat your oven to 350 degrees F and grab some flour. In a bowl, whisk together flour, cinnamon, ground clove, ground ginger, baking powder, baking soda, and salt until combined.

In the bowl of an electric mixer, beat together butter and sugar until combined and smooth. Next drizzle in maple syrup and the vanilla and continue to beat into the butter and sugar mixture until combined.

Now scoop in the pumpkin puree and eggs, beating until well incorporated. Pour in milk, beating until combined. Beat together well and then add in the dry ingredients we whisked together earlier by sprinkling in a little at a time. Continue to mix until dry ingredients are completely incorporated, scraping down the sides of the bowl as necessary.

For an easy batter, I tend to stick with canned pumpkin puree, mainly using Libby’s pumpkin purée. Use the plain unseasoned pumpkin purée variety since we are adding our own flavorings.

Pipe The Batter Or Use a Spoon

Spoon the batter into your donut pan by filling each circle mold about halfway. I like using a spatula to scrape the batter clean from the bowl into a large ziplock bag and then snipping a small bit of the bag’s corner.

Now you can use it as a quick piping bag. To help me out a bit, I like to sit the open baggie upright in a bowl to create a little cradle for the bag as the batter flows in.

Then I’ll press some extra air out of the bag before zipping it shut. This allows you more control and you can just squeeze the donut batter in a roundabout fashion, filling each circular mold little by little until about halfway full.

If I’m unsure of the batter level in the molds, I’ll give the tray a couple taps down on the countertop to let the batter settle in a tad. It creates a cleaner line or level in the pan. Then I’ll either move it to the oven or continue filling as needed. Remember to grease your pan with a non-stick spray before you begin spooning or piping the batter in.

Bake Your Pumpkin Donuts In the Oven

Bake in a 350 degree oven for 10 to 12 minutes or until the tops have puffed up a bit and rounded out in shape and the tops spring back when gently pushed in.

Once the bake time is up, rest your baked pumpkin maple donuts in the pan for 5 minutes then flip out onto a rack to finish cooling. When completely cool, whisk together an easy brandy glaze by combining confectioners sugar, maple syrup, brandy, and pinches of salt.

Dunk the top sides of the donuts in the glaze letting some excess drip off. Set back on the rack and enjoy immediately!

You could also spread a little butter on top (or, my fave, dip in melted butter) and dip them in a little cinnamon sugar.

For The Donuts

  • 2 cups All Purpose Flour
  • 1/2 tsp Cinnamon
  • 1/2 tsp Ground Clove
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Salt
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda
  • 4 tbsp Unsalted Softened Butter
  • 1/2 cup Packed Brown Sugar
  • 1/4 cup 100% Pure Maple Syrup
  • 1 cup Libby's Pumpkin Purée - or good quality 100% pure pumpkin puree – plain
  • 2 large Eggs
  • 1/2 cup Milk
  • 1 tsp Vanilla

For The Glaze

  • 1 cup Confectioner's Sugar
  • 1/3 cup Maple Syrup
  • 1 tsp Brandy - replace with vanilla if skipping brandy
  • 1/8 tsp Pinch of Salt as desired

Instructions
 

To Make The Donuts:

  • Pre-heat your oven to 350 degrees F and grease your donut pan then set it aside. In a bowl, whisk together flour, cinnamon, ground clove, ground ginger, baking powder, baking soda, and salt until combined. With an electric mixer, beat together butter and sugar until combined and smooth. 
  • Now drizzle in maple syrup and the vanilla and continue to beat into the butter and sugar mixture. Scoop in the pumpkin purée and eggs beating until well incorporated.
  • Pour in milk and continue beating together until well incorporated and then add in the dry ingredients we whisked together earlier. Pour in dry mix ingredients little by little and continue mixing until dry ingredients are completely incorporated, scraping down the sides of the bowl as necessary.
  • Spoon the batter into your donut pan filling each circle mold about halfway. I like using a spatula scrape the batter from the bowl into a large ziplock bag and then snipping a small bit of the corner and using it as a piping bag. Remember to grease your pan with a non-stick spray before you begin spooning or piping the batter into the pan.
  • Bake in a 350 degree oven for 10 to 12 minutes or until the tops have puffed up and rounded out in shape and the tops spring back when gently pusbhed in.
  • Let the baked donuts rest in the pan for 5 minutes then flip out onto a rack to finish cooling.

For The Glaze or Cinnamon Sugar:

  • When the donuts are completely cool dip them in some glaze for an added sweet touch. In a bowl, whisk together confectioner's sugar, maple syrup, brandy (if using) or vanilla and season with pinches of salt to balance the sweetness as desired.
  • Glaze the donuts by dunking the top sides of the donuts in the glaze letting some excess drip off then set back on the rack.
  • To dip in cinnamon sugar, I like to take a little spreadable butter and spread it over the top of the donut with a butter knife, then dip the buttered top in a combination of 1 cup sugar mixed with 1 tsp cinnamon. You can also melt some butter and dip your donuts in to coat completely in cinnamon sugar.
